Cooling log sheet
Two-stage cooling, one landscape sheet, nine batches. Both deadlines are counted from the start time, which is the part a hand-written log usually gets wrong.
The sheet
What is on it
- Rule
- Printed across the top: 135°F down to 70°F within 2 hours, then down to 41°F within 4 more — 6 hours in total.
- Per batch
- Date, food item, the start time, and the temperature it started at.
- Stage 1
- The deadline (start + 2h) written in, then the time you checked and what it read.
- Stage 2
- The deadline (start + 6h) written in, then the time you checked and what it read.
- If missed
- A wide column for what you did about it, and initials.
Using it
How to keep it
- Write the start time and the start temperature as the pan comes off the heat. Everything on the row is counted from that time.
- Work both deadlines out from the start, not from the last check. Finishing stage 1 early does not buy extra time for stage 2.
- One row per batch, not per day. Two pans that went into the walk-in an hour apart are two rows with two sets of deadlines.
- Missing a stage is not a reason to leave the row blank. Write what you did — that is the record.

The same log, without the clipboard
The app works both deadlines out from the start you enter and warns you before each one passes, which is the one thing a printed sheet cannot do — the paper does not know what time it is.
